VEGETABLE MARROW JAM

Here is a free Vegetable Marrow Jam recipe from around 1915, sent in by Jesse, in England.   This was a recipe that her great grandmother used and gave to her gran.  Its unsual, but she states that it is great.

So we here at yesteryear-recipes are going to have ago at making it.  This is a vegetarian jam, made from organic produce (whenever it can be found).

Ingredients

3 lb. of Marrow

3 lb. cane sugar (remember to allow 1 pound of sugar to every pound of marrow used)

1 lemon + part of rind grated

half teaspoon of ground ginger

Well let get started on the great recipe.

First take the Marrows and peel, now  scoop out all the seeds, then dice.  Put the marrow into the preserving pan (or large saucepan), Now sprinkle with some of the sugar,  leaving it to stand for 12 hours.  (so best to prepare at night ).

Add the rest of the sugar to what you prepared the night before, now boil slowly for 2 hours.  add the lemon juice, lemon rind, and ginger at the end of 1-1/2 hours. (Best use a timer if your anything like me, I put things on and forget what time I put it on).

Put immediately into clean, hot, dry jars, and tie on parchment covers at once.
