In a Dutch oven brown the cubed veal in hot oil. Add the onion and the carrots. Cook until the onion is transparent. Stir in parsley.

PUMPKIN SOUP

Once you have sweated the vegetables in the butter, pour over the boiling water and boil until the vegetables are very soft. Once the vegetables are soft, pour and rub through a sieve and return to the saucepan with the half pint milk and some pepper and salt, and stircontinuously until it boils up. Your pumpkin soup is now ready.
MILK PUNCH
Pour the quart of fresh milk into a saucepan, add the thinly pared rind of the lemon, and the four ounces of lump sugar; let it boil slowly, once it has boiled remove the peel, now crack your eggs and separate the yolks from the whites and mix in a cup with a little cold milk, now slowly stir into the boiling milk. The punch must not be allowed to boil after the eggs have been added.
