Steak and Kidney Suet Pudding

Now that you have lined the pudding basin with the dough, mix together the steak, kidney and oinon and put into the pudding basin you have just lined with the dough, take a little of the gravey mix add to a little water and pour over the steak and kidney. Take that rest of the dough and place over the top and pinch the sides together so that the pudding is sealed.

Now place the cloth on a flat surface, take the suet pastry that you just made and with the plam of your hands roll the dough to form a ball, place the ball of dough into the centre of the cloth, take the ends of the cloth and tie them together making sure that the dough is completely enclosed in the cloth.

SUET PUDDING WITH PEARS

Now take the loaf of stale bread and soak in water (just enough to soak the bread), once soaked squeeze out the water and add to the suet. Work bread and suet together with your hands, once you have worked the bread and suet together add two eggs, one cup of sugar, and one teaspoon, of salt, allspice, cloves, cinnamon and grated peel of a lemon.
