Sole Edward VII (Wonderful Fish Recipe)

Hi again, here is a wonderful free recipe that we found while we were going through one of Grandma’s old recipe books.  We thought you may like this one, especially if you are a fish lover,  we tried it and it was delicious.  If you are vegetarian, then just swap the butter with a vegetarian substitute, you don’t have to miss out on this wonderful recipe.  This is a wonderful recipe, is made with fresh/organic ingredients.

Ingredients

  • 1 large sole (fish)
  • salt and pepper to season the fish
  • To make the sauce

  • half pound of butter (or vegetarian substitute)
  • 3 ozs of chopped salted almonds
  • 1 quarter of chopped Mushrooms (fresh)
  • a couple of sprigs of fresh parsley
  • 1 lemon
  • grated nutmeg
  • salt and pepper to season
  • half a glass of white wine
  • Ok, now we have all the ingredients lets get started.

    First take the fish and cut the fillets out, once this is done, get a flat bottomed dish, and butter it well, take your fish fillets and lay them out flat in the dish, and season with salt and pepper. (dish should be no more than 2ins. deep that’s what I used)

    To make the sauce.
    Put the half pound of butter into a bowl (and with a wooden spoon mash it until it is a creamy consistence), then add the chopped salted almonds, and the chopped fresh mushrooms, mix them together.

    Once the butter, nuts and mushrooms are mixed together add the chopped parsley. Now take the lemon and put into the juicer, once you have the juice from the lemon add the salt, pepper and a little grated nutmeg, and pour into the mixture, once this is all mixed together spread over each fillet of sole.

    Pour the half glassful of white wine over the fish and place in a hot oven and cook for twenty minutes.

    When done serve with new potatoes and fresh peas, or with a fresh green salad.
