SEA FOAM
Ingredients
2 cups of light-brown sugar
1/2 cup water
Pinch of salt
1 egg white
1 tsp. vanilla
Take the sugar, water, and salt boil until a fairly hard ball will forms. Now crack the egg and separate the yolk from the white. Beat the egg white until it is stiff and forms peaks, but not dry.
Pour the hot sirup over the egg white, a little drop at a time at first, then as fast as possible without cooking the egg white (carefully beating the mixture together). Now add the vanilla (remember to continue beating the mixture until it will stand alone). You will need a spoon for this bit, using the spoon drop some of the mixture on a buttered surface or greaseproof paper. When sufficiently dry, remove from the surface and serve.
Kids will love these, (so will grown ups).
