SCALLOPED ASPARAGUS
Hello, I’m Polly, as you can see I am another member of this clan, and I thought that you might like to try this wonderful free recipe, I like asparagus anytime, this recipe is a great alternative to just plain old boil or steamed asparagus, I am sure you will like it. The ingredients that I have quoted here will serve a family of six. We have big families so we need to use these amounts, but if you a small family just half all the ingredients and follow the cooking instructions the same as if you were cooking for six.
Ingredients
1 bunch asparagus
2 Tb.butter
2 Tb.flour
1 cup asparagus stock
1/2 cup milk
1/4 tsp.salt
1 cup buttered cracker crumbs
1/2 cup grated cheese (if you wish to add a little more cheese, that will be fine, its up to you how cheesy you want the taste to be)
Clean the asparagus under running water. Cut the asparagus into inch lengths and cook in boiling salted water until it is soft enough to be pierced with a fork, once it is cooked drain the water off.
Prepare the sauce by melting the butter, then adding the flour, and pouring into this mixture the heated stock (this is the water that the asparagus is cooked in) and milk, then season with the salt.
Take a baking dish and put a layer of the buttered cracker crumbs in the bottom, put half of the asparagus over them.
Sprinkle the asparagus with one-third of the cheese and add another layer of crumbs, sprinkle with another one-third of the cheese (I always equal the cheese out into 3 dishes). Add the rest of the asparagus, and crumbs to make another layer and sprinkle the rest of the cheese on top.
Now pour the sauce that you made, over the entire mixture, place in the oven, and bake until heated thoroughly and the top is slightly browned. Serve from the baking dish.
