PUMPKIN SOUP (Zuppa di Zucca)

Welcome to yesteryear-recipe, today we have a great recipe that’s simple and free, with pumpkin season upon us we thought that you might like to try this recipe, all I know is that this family likes it and the generations before us liked it.

This is the second Pumpkin Soup recipe that we have, both taste great, and both are slightly different in the way it is cooked, so why not try them both out and see which one you like best.

Ingredients
1 sliced of pumpkin (remember to take the seeds out)
2 tablespoons of butter (vegatarians may use an alternative)
1/2 cup of water
1-1/2 cups of milk (Skimmed if you prefer, vegetarians can use alternative milk product)
1 tablespoon of sugar
pinch of salt

Hey lets get started on this delicious soup.

First get your pumpkin and peel it, now remove the seeds so that the flesh is nice and clean, cut the flesh into pieces, and put into a saucepan with the butter (or vegetarian alternative), add the tablespoon of sugar, a pinch of salt, now add the 1/2 cup of water. Boil for around two hours, now that it as boiled and cooked using a colander drain the water off.

Now boil the milk and place the drained contents into the saucepan of milk(or vegetarian alternative). Allow it to come to a boil, stirring all the time so not to let it burn, once boiled, serve it with squares of fried bread or croutons.
