PICKLED PEACHES
Ingredients
2 lb. brown sugar
1 qt. vinegar
1 oz. stick cinnamon
4 qt. peaches
2 Tb. cloves
First of all boil the sugar, vinegar, and cinnamon together in a saucepan until they begin to look syrupy.
Now wash the peaches and rub them so that you get the fuzz off. Once this is done take one or two cloves and stick into each peach, now drop the peaches into the syrup.
Cook them until they are soft enough to be pierced with a fork(don’t let them get to soft). Now that they are ready put them into jars, and pour the syrup over them, (make sure you fill each jar to the top,) seal while still hot. Allow the jars to cool before storing.
The peaches can be peeled before cooking if you wish, or if you don’t like the skin. also it may be more convenient to cook only half of the peaches in the syrup at one time (if you are going to do a big batch,) cooking the remainder after the first batch have been taken out and put into jars.
I often do a large batch, so that I can use them as Christmas gifts. I also put jars of pickles, jam,and other homemade conserves into a big box, so when I have open house at Christmas for mince pies and muled wine guests can put there hand in a grab a gift on there way out of the house. We have been doing this since I was little, and its a great joy to give everyone a present of good old fashion jams, jellies, and pickles. Why don’t you try it.
