Plantain Chips

Hi, here is a Nigeria free recipe, which a friend (Jasper) of ours gave to us, he is from Nigeria, and says his mother and grandmother cooked this for his family all the time (it was like have chips/crisps).  He cooked it for us, and it was great, it doesn’t take long and is great as a snack, or even for those evenings when you have guests over for drinks.  Not sure how old this recipe is but we thought it deserved to be on our website. This recipe is great for vegans and vegetarians.

Ingredients

  • 4 half ripe plantain
  • salt to taste
  • oil
  • Well lets get started on the great alternative chip recipe.

    Take the plantains and peel them, now slice thinly, once you have thinly sliced the plantain take the salt and sprinkle it over the plantain. Leave to marinate in the salt while you heat the oil in a deep frying pan (a deep saucepan will do) deep fry the sliced plantains until it is crisp and golden brown.

    Drain onto kitchen paper/towels, once the oil has been drain off, place on a plate and serve as a snack or as a nibble with drinks.
