LENTIL SOUP

Hello, seeing that winter is nearly upon us, we thought that you might like a free recipe for a wonderful and filling soup.  Great for winter, warns you up, and is very healthy for you.  Good for vegetarians, has in our other recipes, Vegetarians need only to replace the butter with a vegetarian substitute.

Ingredients

1 lb. Split Lentils
1/2 oz. Butter (or vegetarian substitute).
3 Onions and 2 doz. Peppercorns
1 teaspoonful Sugar
3 quarts Water
Salt

Time Four Hours.

Lets start by washing the lentils, once the lentils have been wash put them into a saucepan with the onions(sliced), peppercorns, sugar, salt, and half of the butter, sweat them for about five minutes. While the ingredient is sweating, boil a saucepan of water.

Once the Ingredients have sweated for 5 mins, get the boiling water and pour into the saucepan with the sweated  ingredients, and boil steadily for four hours.  If the soup gets too thick for your liking, pour in a little more water or stock.

Once it has cooked, rub through a sieve and return to the saucepan; stir in the butter, salt, and pepper to taste.  Again boil up and serve.

Lentil soup is nourishing and is very good for those winter cold months.
