Hungarian Baked Herring

Let us first bone the herring, a great way to bone a fish is to slit the belly open from beneath the head down to the tail, then open up and lay it on a flat surface, press down on the back, turn over and you should be able to lift the bone out, once you have boned the fish cut into small pieces.
Peel and boil 2 large potatoes, once they are cooked, cut them into slices, chop up the onion, now take a baking dish and butter it; sprinkle with the flour.
Place a layer of potatoes on the bottom of the dish, add the chopped onion and herring, now add small bits of butter until you have filled the dish;(remember to save some potatoe slices and bits of butter for the top layer) add pepper to season. Add the remaining potatoes to form a top layer, add the rest of the bits of butter. Take 3 tablespoonfuls of sour cream and plce it on the top of the potatoes to moisten.
Bake in a moderate oven until brown. Serve hot.
