French Venison Pie
Well, we sure do get some great recipes from people across the globe. This must have been an old hunters recipe. Venison is a game meat, it tastes a bit like beef, but with a stronger taste. You can only get Venison in hunting season.
We have tried this recipe and it absolutely wonderful to us. So why not try this wonderful free recipe of someone’s grandma or grandpa from France.
Ingredients
1lb of venison
salt and pepper for seasoning
glass of port wine
cloves and mace (pinch)
4- pieces of butter (rolled in flour)
Take the venison and cut into very small pieces season with the salt and pepper, and stew until tender.
While the venison is stewing, line a deep pie-dish with a rich pie-pastry and blind bake.
Once the pastry is cooked and the vension is tender, fill the pie pastry with the venison.
Add to the glass of port wine a pinch of cloves and mace, place the bits of butter rolled in flour into the mixture. now warm the mixture until it the butter has melted (remember to stir while warming so that the flour doe’snt go lumpy).
Pour the sauce over the venison and cover with a top pastry.
Rub the top with a beaten egg and let bake until done. You can always add some carrots and onions to the venison.
Serve with some boiled potatoes and green vegetables
