East India Fish

Todays free recipe is this little eastern delight called East India Fish.  It uses wonderful fresh wild salmon, (but you can use farmed salmon too).  This is a great old recipe, which would have been for a special occassion, in our household.  This would have come from my Grandma’s family, due to the fact that they were originaly from England, where a lot of the trade of spices came into the docks from India.

Ingredients (serves 2/3)

  • 1/2lb of cooked salmon
  • 1 oz butter
  • 2 small onions
  • 1 oz of coconut
  • 2 hard boiled eggs
  • 1 tsp of curry paste
  • 1 tsp of paprika
  • 1 pint of milk
  • 1 large tablespoon of rice
  • pinch of salt
  • Hi I hope you like this recipe, we love it in our family, so lets get started.

    Take your cooked salmon and slice it, now put the salmon to one side for a while, we will get back to it.

    Take 1 ounce of butter and heat in a saucepan (becareful not to let it burn), now take your 2 small onions and finely chop, put the onion into the saucepan with the melted butter, add 1 ounce of coconut, and 2 chopped hard-boiled eggs. Let this cook in the saucepan for a few minutes. then add 1 pint of milk, and bring to the boil once.

    Once the mixture has boiled add the salmon, 1 teaspoonful of curry paste, and 1 teaspoonful of paprika, and a pinch of salt to taste .   Let it cook for a few minutes, then stir in 1 large tablespoonful of boiled rice.   Serve very hot with toast, or a nice green salad.
