CREAMED SPINACH

Hi, Here is todays free recipe for you to try, Creamed Spinach from one of grandma’s recipe books, this recipe serve four. This was a way to get us kids to eat our greens, (as you know, its hard to get kids to eat there greens) I have used this recipe a lot through the years, it worked for me, when mine was young, the same way it worked for Grandma, when hers were young, but she used spinach straight from the garden. These days you can buy the pack (organic is best) so I have slightly changed the ingredients to packet as that is easier for most people. Remember this is a great recipe for vegetarians, just change the fat to a vegetarian substitute.

Ingredients (Sufficient to Serve Four )

  • 1/2 pack spinach
  • 1/2 tsp. salt
  • Tb. ham or bacon fat or vegetarian substitute
  • (I know it is against everything said today about fat, but it adds great flavor)

  • Dash of pepper
  • 2 Tb. flour
  • 2/3 cup of milk
  • Boil the spinach according to the directions on the pack or if using fresh spinach around half a pound or a little more. Melt the fat in a frying pan, now add the flour,salt, pepper, and milk, and stir until the flour thickens. Chop the cooked spinach and add it to the sauce that you have just made. Stir and cook until the two are well mixed. Serve hot as one of your five a day vegetables to compliment your main meal. If you find that this is not enough just double up on our ingredients.

    Spinach is very good for you because of the high content of Iron in it. (you never know you may end up with with big strong lads like Popeye).
