CHESTNUT FRITTERS

Hi again, how about trying these wonderful Chestnut fritters recipe, that was sent in by Christina, she said that her grandmother made them back in the UK, and being that autumn is upon us and that means chestnut season is coming, we thought that this would be a good free recipe for you to try out.  I know that we here at yesteryear-recipes are looking forward to trying this wonderful recipe.

Ingredients

approximately 20-25 Chestnuts

1level tablespoon of Castor sugar (powered sugar)

half glass of milk

vanilla essence (or pod)

half a tablespoon of butter (or butter substitute)

3 egg yolks (keep the whites for later)

breadcrumbs

Method
Put your chestnuts onto a baking tray and roast them in a medium heat oven, approximately 30 mins.  When cooked, remove the nuts from the shells carefully, so that the nuts do not get broken, now put them into a saucepan with the half glass of milk and  one level tablespoon of powdered sugar and to this add a little vanilla.

Cover the saucepan with the lid and let it cook slowly (simmer) for just over a half hour (40 mins).  Once boiled (simmered) drain the chestnuts and put through a sieve.   Now put them into a bowl with half a tablespoon of butter, add 3 egg yolks, and mix all the ingredients together.

Allow them to cool, once cool take a tablespoon of the mixture and roll them into the size of a nut, (or if you wish flat patties) now take the  rolled mixture and dip them in the white of the eggs, and then into the  bread crumbs, now fry in butter and lard,(or oil) make sure the fat is hot (be careful that you don’t splash yourself when doing this bit) a few at a time.

When cooked sieve some powdered sugar over the fritters and serve hot .  You could also add a little cinnamon to the powered suger if you wish.
