This noodle dish, literally translated as “Noodles from Siam” actually has its roots in nearby Malaysia, where it is usually eaten for breakfast (which explains the addition of boiled eggs). However, I find it also makes a great dinner dish.

Once you have sweated the vegetables in the butter, pour over the boiling water and boil until the vegetables are very soft. Once the vegetables are soft, pour and rub through a sieve and return to the saucepan with the half pint milk and some pepper and salt, and stircontinuously until it boils up. Your pumpkin soup is now ready.
