CANDIED PEEL

 Grandma use to make this mainly in the festive season, but I think it can be made anytime, it doesn’t take long and its different. Free festive recipe.

Ingredients

1/2 doz. lemons, oranges, or grapefruit

 1/2 Cup water

 1 Cup sugar

This tastes just great,

Remove the skin in quarters from the fruit, scrape off as much of the white as possible, and cut each piece of skin into narrow strips. Put these into a pan of cold water, and place on the stove to boil until they are soft but not to soft (easily pierced with a fork), once cooked drain off the water into another saucepan which as the sugar in it and cook, you will know with it is ready, by dipping a spoon into the syrup and as you take the spoon out a thread with form when dropped from a spoon.  Now add the cooked peel to the syrup and cook for 5 to 10 minutes.  Drain and dredge in granulated sugar. Spread in a single layer to dry.  This is great recipe for vegetarians
