African Peanut Soup

Free African Peanut Soup recipe given to us by a very good friend from Igbo tribe.  This can be a vegetarian soup as long as you use the vegetable broth.

Ingredients
1    Tablespoon of  vegetable oil
1    whole    garlic clove, chopped
1/3    cup    tomato paste
2/3    cup    creamy peanut butter
1/8    tsp.    cayenne pepper
4    cups    chicken or vegetable broth

In a saucepan heat the oil over a moderate heat until hot but not smoking, and cook the garlic, stirring until garlic is golden, takes about 1minute.

Add tomato paste, peanut butter, cayenne pepper, and 1/4 cup broth (chicken or vegetable) and stir until smooth.  Now stir in remaining 3 3/4 cups of the broth, cover the saucepan with lid and simmer, stirring occasionally, for approximately 10 minutes. Then simmer soup, uncovered for another 10 minutes, or until oil floats to the surface,  skim the excess oil off the top.  Your soup is now ready.
